Vietnamese chicken curry (Cà ri gà)

♥ Ingredients:
(Serves 4~6)

Curry spice mix:

1 tbsp curry powder
½ packed tbsp brown sugar
1 tsp paprika
¼ tsp cayenne pepper (optional)
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp freshly ground black pepper

3 lbs (1.5 kg) chicken legs, cut into bite size
1 lemongrass stalk
2 tbsp fish sauce
½ onion, minced
1 shallot, minced
3 carrots, peeled, cut into bite size
2 large potatoes, peeled, cut into bite size
1 sweet potato, peeled, cut into small pieces
1 tbsp cornstarch
1 cup (240 ml) coconut milk
½ cup (120 ml) whole milk
2 tbsp cooking oil
1 cup chopped fresh cilantro
French baguettes to serve

½ tsp muỗng cà phê bột hành
½ tsp muỗng cà phê muối
¼ tsp muỗng cà phê tiêu xay

1 nhánh sả
2 tbsp muỗng canh nước mắm
½ củ hành tây, cắt nhỏ
1 củ hành ta, cắt nhỏ
3 củ cà rốt, gọt vỏ, cắt vừa ăn
2 củ khoai tây, gọt vỏ, cắt vừa ăn
1 củ khoai lang đỏ, gọt vỏ, cắt nhỏ
1 tbsp muỗng canh bột bắp
1 cup (240 ml) nước cốt dừa
½ cup (120 ml) sữa tươi
2 tbsp muỗng canh dầu
1 cup ngò (mùi)
